CITY SPICE SALSA

Developed by Darlene, Chris & Carol, the winners of the GO! Healthy Salsa Challenge

About 8 large Roma tomatoes, diced
1 small red onion or ½ of large, diced
1 cup corn
1 yellow pepper, diced
1 cup black beans
¼ cup (approximately) finely chopped Cilantro – to taste
½ squeezed lime
1 jalapeno without seeds, diced
Squeezed juice of 3 tomatoes
4 garlic cloves, minced
¼ cup pineapple juice
2 Tablespoons balsamic vinegar
1 ½ Teaspoons olive oil
Cumin to taste
Salt and Pepper to taste

Mix all ingredients together and season to taste

TIPS FOR A FASTER,HEALTHIER MORNING

LEMON WATER

First thing: Drink a glass of room temperature or warm water mixed with lemon slices and the juice of ½ - 1 lemon then wait 15-30 minutes before eating breakfast.  Lemons are packed with vitamin C (boosts the immune system) and potassium (necessary for heart health and brain function).  Lemon water also helps freshen breath, loosen phlegm and cleanses the liver.

MAKE BREAKFAST DOABLE

Having a cupcake pan full of eggy breakfast cups is one way to jump start the day.  Get the kids involved: Let them choose and assemble the ingredients they want in their morning breakfast cup, then watch them devour their creation.
